  My Bad Christmas Christmas was pretty bad for me in terms of over-eating and lack of exercise. A simple baked strawberry & rhubarb recipe inspired me for this one. I was reading it and decided that this would make a fantastic jam, especially when I read the bit about the balsamic. Using the standard strawberry jam recipe from my favourite little book, ‘Mrs Beetons Jam Making’, I created a rather tasty new jam. It sounds a bit different but trust me it’s just as sweet and yummy as any other jam. Have a go, and let me know what you think! Easy Nectarine Chicken!

I have decided to mix up the traditional apricot chicken. I had some chicken thighs in the fridge that needed eating and when I was at the shops today all I could smell were the Nectarines so I decided to grab some and get creative with my chicken.
