How to make the Perfect Pickle

Check out this super tasty Pickled veg recipe!

“I’ve got a Pickle, I’ve got a Pickle, I’ve got a pickle, hey, hey, hey, hey!” And you will too after giving this tasty recipe a go. This year I’ve decided to give the gift of homemade goods. And these yummy pickles are up on the top of my list. They’re so easy to make and you can make them weeks, even months, in advance. The beauty of this recipe is that you can use pretty much any veggie you want, I even added a sliced up granny smith apple. You can mix up the spices to suit too. As […]

Pesto Meatballs

Super tasty pesto meatballs are great in a chicken broth or a hamburger patty

We are currently on a serious budget with the wedding coming up and our trip overseas. This month we’ve challenged ourselves with living off what’s in the fridge & cupboard & only spending $50/wk (or less) on groceries. This would be fine if at the same time I wasn’t trying to be super healthy. We could just carb load on homemade pasta & bread, I have heaps of goodies in the cupboard that’d work wonders with them! But, alas, I must at least try & stick to my goals as much as possible. Step in Pesto Meatballs in a Chicken […]

Deep Dark Chocolate Cake

Delicious & easy family chocolate cake recipe!

This is the best chocolate cake in the world!! Massive claim hey? But really it’s so good. Ok, ok I haven’t tried every chocolate cake in the world but I’m sure if I did it’d definitely be up there! I don’t really remember where this cake recipe came from. Mum got it from a friend I think. All my memory of it is that one minute there was life with no Deep Dark Chocolate Cake and the next minute there was life with Deep Dark Chocolate Cake.    Ok, so why do I think it’s the best chocolate cake? Well, […]

Candied Walnut & Sweet Potato Salad

A delicious salad for any dining table

This has to be one of my favourite salads. It’s got that beautiful freshness from the greens, a vibrant contrast in colour with the sweet potato and then it’s got the rich flavour of the feta cheese masked by the sweetness of the candied walnuts and then all brought together with the tangy dressing. D-E-L-ICIOUS! This salad goes great with almost anything. We last had it with a simple piece of steak and it was it needed. It was also a big hit at Christmas, I had to make a second one for our boxing day ‘leftovers’ lunch. So much […]

Prawn & Salmon Spaghetti

A healthy and tasty pasta option

So the new year has begun and to start it fresh here is my new favourite pasta dish. This recipe came to be on the lead up to Christmas. My fiance and I were going away for 10 days and we were slowly eating everything in the pantry and fridge. On our last night at home all we had left was 1 frozen salmon steak and a bag of frozen green prawns. What a happy accident that was! Since that dinner I have cooked this dish 3 times for ourselves & others. Every time it’s been devoured in a flash. […]

Tomato Relish

Delicious cafe styled home made relish. Perfect for that beef burger your making tonight!

I find that at this time of year (Christmas) I get a lot more motivated to make mass jams, pickles & chutneys. Don’t get me wrong, I love making them any time of year, but particularly now because I find they make such great gifts! Before I go on though, I just want to clear up one small misconception about home made gifts, they are not always the cheap option. I spent $45 today buying ingredients to make chocolate truffles. Once you put that together with the amount of time it usually takes to make the gifts I’d say you’re […]

Balsamic Strawberry & Rhubarb Jam

A delicious new twists on your classic strawberry jam!

A simple baked strawberry & rhubarb recipe inspired me for this one. I was reading it and decided that this would make a fantastic jam, especially when I read the bit about the balsamic. Using the standard strawberry jam recipe from my favourite little book, ‘Mrs Beetons Jam Making’, I created a rather tasty new jam. It sounds a bit different but trust me it’s just as sweet and yummy as any other jam. Have a go, and let me know what you think! If you liked this jam you should definitely check out my Plum & Vanilla Jam!

Easy Nectarine Chicken!

This recipe is delicious, and it's so simple! I highly recommend giving it a go.

I have decided to mix up the traditional apricot chicken. I had some chicken thighs in the fridge that needed eating and when I was at the shops today all I could smell were the Nectarines so I decided to grab some and get creative with my chicken. And it worked surprisingly well. I’m calling it the modern take on Apricot Chicken. And best of all it’s so easy and healthy. You pretty much throw everything into the one dish and let it cook. Here’s the recipe. Give it a try and let me know how you go. If you’re […]

Plum & Vanilla Jam

Try your hand at some home made jam. This is one of my faveourite jam recipes. It's easy and delicious!

I love making jam. I don’t know why or how I came to love making jam, but I do. Maybe it has something to do with my mum and aunt making it when I was younger, I don’t know. The first time I ever made jam, it was a marmalade actually, was when I had a whole heap of oranges and very little time to eat them because I was going away for a couple of months. Terrible forethought on my part, might I add! It turned out to be the nicest marmalade, it was beautiful and clear and had […]
