We are currently on a serious budget with the wedding coming up and our trip overseas. This month we’ve challenged ourselves with living off what’s in the fridge & cupboard & only spending $50/wk (or less) on groceries. This has to be one of my favourite salads. It’s got that beautiful freshness from the greens, a vibrant contrast in colour with the sweet potato and then it’s got the rich flavour of the feta cheese masked by the sweetness of the candied walnuts and then all brought together with the tangy dressing. A simple baked strawberry & rhubarb recipe inspired me for this one. I was reading it and decided that this would make a fantastic jam, especially when I read the bit about the balsamic. Using the standard strawberry jam recipe from my favourite little book, ‘Mrs Beetons Jam Making’, I created a rather tasty new jam. It sounds a bit different but trust me it’s just as sweet and yummy as any other jam. Have a go, and let me know what you think! I have decided to mix up the traditional apricot chicken. I had some chicken thighs in the fridge that needed eating and when I was at the shops today all I could smell were the Nectarines so I decided to grab some and get creative with my chicken. It’s now the season of sunshine, fun at the beach, holidays, parties, BBQs, and stone fruit! Stone fruit is one of those foods that around my pubescent and just post pubescent (yep, I went there) stages I didn’t like, along with eating chicken off the bone and Parmesan cheese.
